Ingredients

  • 1 cup pearl couscous
  • 1 tablespoon lemon juice
  • Lemon zest, for garnish
  • 1/2 tablespoon olive oil
  • 1 tablespoon fresh oregano, chopped
  • 2 cloves garlic, minced
  • Salt and pepper

Instructions

    1. In a medium pot, bring 3 cups of water to a boil.
    2. Add 1 cup of pearl couscous and 1 tablespoon of kosher salt.
    3. Cover the pot and simmer to al dente according to package instructions.
    4. Strain the cooked couscous and transfer it to a mixing bowl.
    5. Whisk together 1 tablespoon of lemon juice, 1/2 tablespoon of olive oil, fresh oregano, minced garlic. Pour the lemon mixture over the couscous.
    6. Mix well to combine all the ingredients.
      Season with salt and pepper to taste.
      Sprinkle lemon zest on top.
