Lemon Garlic Spinach
Lemon garlic spinach is a super quick and healthy side. We use plenty of garlic and brighten it up with tangy lemon.
I buy a lot of spinach for salads. I eat not a lot of spinach in salads. So I need spinach recipes that make it super easy and delicious to eat all these greens. That’s why I love this lemon garlic sauteed spinach. It is garlicky and tangy, and it is delicious on its own or in one of our harvest bowls.
Techniques for perfect Lemon Garlic Spinach
- This is a pretty simple recipe, but I do have one key technique: Cook the spinach until it wilts, but doesn’t lose all texture. Overcooked spinach turns into a soggy mess. Cook this spinach until it is wilted and still bright green.
Lemon Garlic Spinach
This super simple side is perfect for using up a bunch of spinach.
Ingredients
- 4 cups spinach
- 4 cloves garlic
- 1/2 tablespoon olive oil
- 1/2 tablespoon lemon juice
- Salt and pepper
Instructions
- Saute the spinach and garlic: Add the olive oil and garlic to a large skillet and heat over medium-low heat. When the garlic starts to brown, add the spinach and saute until the spinach is wilted but still bright green. About 5 minutes.
- To serve: Stir the lemon juice into the spinach and season to taste with salt and pepper.
